Threw together random ingredients from my fridge to make a pretty decent pasta! This is my first time trying brown rice/flax seed pasta.
I sautéed some chopped parsley and garlic until the garlic turned brown and then added cauliflower, mushrooms and basil. Then I added some cooked chicken breast from last night’s dinner and a splash of white cooking wine (it just fell in there, I promise ~.~). When the penne was done cooking, I threw it in with the veggies and added some more extra virgin olive oil and sea salt and fresh black pepper to taste. I was really close to adding a pinch of Parmesan cheese but the hubby stopped me. :)
The penne pasta was better than I expected though it still had a gritty finish. The mushroom and cauliflower helped with the texture though, next time I’ll add more of both.
